Chicken Tinga


INGREDIENTS: -1lb Boneless, Skinless Chicken Breasts -1 -14.5oz Can Diced Fire Roasted Tomatoes -1 Tsp. Cumin -1 Tsp. Paprika -1 Tsp. Cinnamon -1/2 Tsp. Sea Salt -1/2 White Onion, diced -2 Garlic Cloves, minced -Optional Toppings: Avocado, Cilantro, Sour Cream. DIRECTIONS: 1. Over a pan on the stove, let the Fire Roasted Tomatoes come to a simmer over medium heat. 2. Add the Onions, Garlic, and Spices to the Tomatoes and let simmer an additional 5 minutes. 3. Pre cube the Chicken into bite size pieces, add to the pan, drop the heat to low, and let simmer for 35 minutes! Serve over a Bed of Greens, Cauliflower Rice, or as Tacos!
