✢ Spanish Cauliflower Rice
-1 Bag Cauliflower Rice (I used Keto & CO dry Rice, but you could also buy the frozen variety)
-1lb Boulder Sausage
-1 Bell Pepper, diced
-1 Tsp. Garlic Powder
-Salt & Pepper to taste
-Truffle Salt to taste, optional
-1 Cup White or Brown Mushrooms, diced
-4oz Cream Cheese
-1 Tbsp. Olive Oil
1. Dice your Peppers and Mushrooms and begin sautéing over medium heat. Drizzle the Olive Oil on the Veggies.
2. Saute Veggies for 5 minutes, then add the Sausage in and saute for an additional 5-10 minutes.
3. While the Meat & Veggies are cooking, boil water for your Keto & CO Rice. Follow the instructions on the bag. If you are using the frozen variety, add to the Meat & Veggies and cook for 5 minutes.
4. Once Meat, Veggies, and Rice are mixed and cooked, add the Cream Cheese and Spices. Mix well.
