Cheesecake Cupcakes

Cheesecake Cupcakes!!
-Tip: Don’t open the oven ;) The centers will fall!

-8oz Cream Cheese 
-3 Eggs
-1 Tsp. Vanilla Extract 
-1/4 Cup Erythritol 
-Zest of 1 Lemon
-Optional Toppings: Berries or @knowfoods Chocolate Chips

1) Preheat oven to 350. Beat cream cheese until fluffy, about 3 minutes. Combine with sweetener, lemon zest, and vanilla extract, mixing for about 3 minutes.
2) Gently add eggs one at a time. beating until thick and creamy, about one minute after each egg.
3) Lightly grease the sides of the cupcake dishes or line them with papers. Pour in the filling. Bake for 30 minutes or until puffy and lightly brown around the edges.
4)Turn off the oven and let the cupcakes cool for 30 minutes in the oven.
