Caprese Salad on Mixed Greens

 Derek and I are loving growing herbs. We have an outside garden and then also have an Aerogarden, which is an indoor Hydroponic Garden, so we are getting lots of herbs.

 

For this salad, I made Pesto, using Basil, Olive Oil, Macadamia Nuts, and then added other ingredients to make this Caprese Salad!! Mmmmm!

 

INGREDIENTS:

For Pesto:

-1 Cup Fresh Basil

-4 Tbsp. Roasted Garlic Olive Oil

-1/2 Cup Macadamia Nuts

-Salt & Pepper to Taste

 

For Salad:

-Mixed Greens

-1 Cup Kalamata Olive

-2 Heirloom Tomatoes

-2 Large Slices Fresh Mozzarella 

-2 Tbsp. Roasted Garlic Olive Oil

-1 Tbsp. Balsamic Vinegar

 

DIRECTIONS:

1. In a food processor, add the ingredients for the pesto and blend up.

2. Top the mixed greens with all ingredients and enjoy!!
